Western scientists became interested in green tea in 1970, when population studies in Asia associated tea drinking with many health benefits. This is because while both green and black tea leaves are from the same plant, GREEN TEA leaves are fermented before drying to produce black tea, and this fermentation process may destroy some of the health-giving properties of tea.
